How it comes together:
Dice the fish and chill while you prep. Mix lime juice with our Dunes Finger Lime & Lemon Bitters, zest and chilli, then gently cure the fish until just opaque. Fold through onion, coriander, olive oil, salt and pepper, taste (important), and serve straight away.
Best enjoyed with corn chips, tostadas, or straight from the bowl.
